Almond Butter filled Sweet Potato Muffins

More breakfast madness!! I've created some more breakfast muffins though these are more on the sweet side, sometimes all you want is to get up get ready grab your food and walk out the door! So creating a nice big batch of these muffins will make that super easy!!

Perfect for hitting the rush for work these are a great mixture of slow releasing carbs, metabolising protein and hormone regulating fat! What's more is they're so incredibly yummy you will be wanting them for every meal of the day!!

Quickness and ease is whats needed for breakfast and when these are made the night prior it makes the morning a doddle, and kids will loves these too!!

So by the power of Gray Skull let's get makin' & bakin'!!

INGREDIENTS TO MAKE 4

  • One medium sweet potato
  • 50g half fat creme fraiche (lacto free cream cheese for lactose free version)
  • 1 egg
  • 40g Almond butter
  • 20g Vanilla Casein though any flavour will work (pea protein for lactose free version)
  • 1/2 tsp cinnamon

BAKE your potato aorund 30mins in the oven at 200C

SCOOP the potato out the skin and add to with all other ingredients except nut butter

BLEND till smooth

FILL muffin cases half way with the mixture

SPOON 10g of almond butter into the middle

TOP with rest of muffin mixture

BAKE for around 20-25mins at 180C

DONE

Carefully take the muffins out of there cases if you used rubber ones like myself and allow to cool and save for tomorrow.

No, no they didn’t I was joined in being a naughty little oinklets by my mum and scoffed the lot oh well…. They’re so AMAZING!!! The soft and moist muffin breaks away and reveals the gooey almond center it’s slighty salty edge intensifying the sweetness of the sponge, with it all being washed down with a slight hint of spice from the cinnamon! KOOWIEEEE!!

Wanting to make friends? Don’t feed them this as they will hate you for how good they are!
