Chicken Pan Curry
I’m a huge lover of flavours from Asia, aromas and spices that make your mouth water and send your taste buds into a frenzy of “SHAZZAM THAT SHIZZLE IS AWESOME!” though some recipes do tend to be long tedious and take a while to cook so I thought let’s bust out a quick pan curry!
“One pan to rule them all and in the darkness bind them…...” That’s how It went right?
All the ingredients, in one pan, 10 minutes later food fit for a new ruler of middle earth!
- Chicken Breast (I used two here)
- 1 Spring Onion
- 1 Red Bell Pepper
- Handful Cherry Tomatoes
- 1tbsp tomato puree
- Feta Cheese around 40g
- Toasted sesame seed oil for frying
- ½ tsp Turmeric, Cumin seeds, chilli powder
- Salt and Pepper
- Fresh Coriander
May we depart on our journey now, “Which way Gandalf?”
HEAT oil in pan
CHUCK in chopped red pepper, onion and crushed garlic, leave for few mins
ADD sliced chicken breast and spices (not coriander) leave couple more mins
ADD in the tomato puree and halved cherry tomatoes leave to fully cook
GARNISH with crumbled feta and finely chopped coriander
