BBQ Lamb "Burnt Ends" style

BOOM!! ACTUAL BOOM! Some people in London... Nay, alot of people in London have been to "Bodean's" BBQ house and tasted the amazingness that is their burnt ends! Now if you don't know what burnt ends are here's teacher Will to chat it over with you!

"Burnt ends are flavorful pieces of meat cut from the point half of a smoked brisket Originating from Kansas City with their own style of burnt ends being usually served cubed with sauce either on top or on the side."

Now usually making burnt ends requires you having a smokehouse and I have actually made my own here. But not all of you can pop out into your garden and just bust out ye'olde smokehouse HA! So I've created a way for you to be able to make your own version, without a smokehouse in your very own home, all you need is a kitchen!

This particular recipe is slightly different with me using lamb's leg instead, I find that lamb has a flavour that is just perfect for this style of cooking.

INGREDIENTS

  • Butterfly Leg of Lamb
  • 2tsp Smoked Paprika
  • 2tsp Paprika
  • 1tsp Cumin
  • Salt & Pepper
  • 1 1/2 tbsp Worcestershire sauce
  • Drizzle Chilli olive oil

*Note* These measurements are’t exact as I just put enough to cover the meat though take note that there is more paprika then cumin. Be liberal with your seasoning and take into consideration the size of your meat as your bit of meat might be alot bigger than mine (forgive the inuendo there haha)

TURN your oven to 160C fan assisted

CLEAN and PLACE your lamb’s leg into a roasting tin

MASSAGE your meat with each of your spices, one by one, starting in the order they’re written

COVER with tinfoil and pop in the oven for 2hours

MAKE bbq marinade sauce to cover your meat when ready. Recipe for homemade BBQ sauce HERE

PULL your meat out and cut into chunks or slices. I preffered slices in this instance.

PUT your meat back in your roasting tin (used a new fresh tin)

COVER with your marinade and put back in the over for around 15mins just long enough for your marinade to become warm

The creation of sentences like “SHIT THAT’S GOOD” thus came into existence from eating food like shit! This is truly sublime! TENDER!!!!! Such tender Lamb that’s overfowing with flavour, deep, rich, full smoky aroams being forced on you make you salvate like never before! And that sauce is so thick, it’s moistness just causing the lamb to just slide down your throat and inviting the next piece in!

I genuinely can’t describe anymore how damn good this is! And most of all you can cook it all over a lazy afternoon on the weekend, for someone special or guests they will be WOWED!
