Moroccan Lamb Cutlets
I love lamb it’s tasty and succulent beyond most other meats readily available and has a truly unique taste none of this “Tastes like chicken” rubbish!
Cutlets are probably one of the lesser used cut but they’re AMAZING! Perfect for parties, picnics with its readily available end to pick up and munch on you can’t go wrong especially in this weather that just promotes BBQs and good times!
Easy to cook simply whack it under the grill or bosh it on the barbie!

INGREDIENTS
Ingredients:
- Lamb Cutlets
- 2 tbsp Yogurt
- 2 tbsp Olive Oil
- 1 tsp Paprika & Cumin
- Freshly Chopped Coriander
- Splash Lemon juice
- Salt & Pepper
- 1 tbsp Pine nuts

CHOP the pine nuts up
WHACK all the ingredients together in a bowl and MIX
COAT cutlets, leave in the bowl and cover with clingfilm and place in the fridge, allow to marinate for at least 1hour and up to 24 the longer he better though

GRILL for around 4mins each side or till golden on both sides
DONE
SERVE with a fresh side of salad and houmous
EPIC! I love this recipe as the edges go slightly crispy with the yogurt keeping it tender, and calming the strong flavour of the lamb making it subtle and luxurious!
