Homemade Peppermint creams - “After Eights”
I love “After Eights” and let’s be honest everyone loves them, if you don’t well we can’t all be perfect can we Ha! It really is all about having some homemade ones though, making them as thick or with as much filling as you want. Plus, rather than having a purely fondant sugar filling makes them a great snack to have at the office or while you’re travelling!
They’re also incredibly easy to make too!!

INGREDIENTS
Ingredients for about 15;
- 2 Bars Dark chocolate (200g)
- 50g coconut oil
- Peppermint oil
- Stevia or any sweetener of your choice

MELT one bar of chocolate
POUR small amount into the bottom of a silicone muffin tray, for easy extraction but any muffin case will work… I think
FREEZE
MELT coconut oil and ADD stevia and peppermint oil – Add to your liking making it as sweet and minty as you like it
FREEZE
MELT second bar of chocolate and allow to slightly cool after
TOP with second lot of chocolate covering the coconut oil, be quick and fast so not to not melt the coconut oil

DONE
