Rhubarb Crumble
It’s in season, it’s fresh and it’s a lot cheaper than the rest of the year! Most of all though WE LOVE IT!!!
I MEAN CRUMBLE!!!!!!!!!!! Crunchy, cake like topping covering a perfectly sweet, fresh fruit centre that makes you just go “OOOOOOOOOOOOOOOOOOO!!!” Though the usual thought with having something like this is that it’s laden with calories! Sugar cooked with the fruit, sugar butter and flour for the crumble all of which calorie dense and rich foods!
BUTTTTTTTTTTT with a couple of changes here and there you’re on to an EPIC one and suddenly you’re wishing dinner and your dessert to be coming a lot quicker!
We’ve changed out flour for ground oats and ground almonds, sugar for stevia or your preferred choice of sweetener (I’m also a big fan on MyProtein’s flavourings) and suddenly the calories have halved!
So let’s get makin’ & bakin’

Ingredients
Ingredients Crumble:
- 100g Ground Oats
- 60g Ground Almonds
- 50g Butter
- ½ tsp cinnamon
- 1 tsp Vanilla Essence
- Stevia or your choice of sweetener (add to match your preference to sweetness)
Ingredients Filling;
- 600g Rhubarb
- 1 tsp Vanilla Essence
- Stevia or your choice of sweetener (add to match your preference to sweetness)


HEAT your oven to 180C fan assisted
BOSH all your filling ingredients into a pan and heat on your hob till soft, warm and smooth
COMBINE all your crumble ingredients together in a bowl and press & push together till a crumb like consistency is formed

POUR cooked rhubarb into oven dish
TOP with crumble
BAKE for 15-20mins or till crumble is golden
SERVE hot or cold with cream and EPICNESS


I usually share all my creations with my family letting them enjoy the fruits of my labour………That didn’t happen this time as I just scoffed it all myself it was so damn good!
Golden, crispy outer that coats a soft, juicy centre that oozes flavour and moreishness!
All the exact same taste, half the calories!
