South American Pan Stew

We love meals that you can just chop and bang in a frying pan minimal effort for cooking and washing up means maximum enjoyment!

BEST of all it only takes 5mins to cook so you can get back to relaxing and having some downtime without the thought of slaving away over that stove for half an hour

Not like your typical long cooking heavy stew, this is a quick in the pan one that's packed full of flavour, zest and spice! Perfect for any lunchtime or dinner with it being filling but light on the stomach!

It doesn't need much introduction other than the fact that it's awesome & you should be having it!



  • Chicken thigh
  • 1 Spring Onion
  • 2 Tomatoes
  • Salt
  • Chilli
  • 1/2 lime
  • Coriander

CHOP chicken thigh in to chunks, salt and chillify

CHUCK chicken in a pan on medium heat with some oil (I used almond for its high smoking point)

CHOP finely spring onion and coriander with tomatoes into 8ths

ADD tomatoes then a minute or so later onion, juice of half a lime and coriander


BOOM! You will now have cooked the mightiest of meals! He-man and She-Ra would be proud of you! Perfectly flavoured, succulent chicken with juicy tomatoes and aromatic coriander leave you eager for more! I can honestly say it’s one of my favourite meals I’ve done!
