Thai Crab Avocado

Snacks!! Ahh such an important topic! So often do you find yourself grabbing something you really shouldn’t be eating as a snack purely because you might be a bit rushed or just didn’t come prepared?

Well this is why I’ve created something that’s pretty much instantaneous on the make and create section of snacks! You can do it in literally UNDER 3 minutes; I know this as I timed myself! That’s how cool I am!..... Oh the sarcasm.

Anyway with this recipe also being super quick it’s highly delicious with items that just need to be grabbed and banged in a bowl! Going with a light and bright asian flavour to really perk those taste buds of yours up in this awesome weather too!

It doesn't have to take ages to cook to taste AWESOME

INGREDIENTS

(per one avocado)

  • Avocado
  • 120g Crab meat – I used a real crab but you can grab a tin to keep this super quick)
  • Juice of ½ a lime
  • 1 tbsp sesame seed oil
  • 2tsp soy sauce
  • 25g Crème Fraiche
  • Fresh grated ginger – around 1-2cm
  • Chilli flakes – optional

COMBINE all ingredients except avocado together in a bowl and mix thoroughly

CUT avocado in half and de stone

SCOOP out an additional 1cm of flesh around the cavity

FILL with your mixture

DONE

Quick, and perfect to enjoy sitting the sun with your spoon as a mid morning or afternoon snack! Full of epic nutrition you really can’t go wrong! Light, zesty and fresh makes it oh so moreish and brilliant to have in a rush giving you peace of mind knowing you’ve got something god in you!
