Tuna Quesadilla

EPIC handheld goodness!

Tuna, especially that of the tinned variety can taste dry, bland, salty and ultimate the only real flavour you get is fish.... Not exactly the food you go running into the kitchen going "Ooooooo goodie goodie tuna time"

Well how can we make it more interesting so we get a bit of spice to perk it up, some citrus to cut through the fishiness, some smoothness to improve the texture and finally a luxurious crunch!?

Well Quesadillas know how!!!



  • Tin of Tuna
  • Cherry Tomatoes about 8
  • 1tbsp Sour cream
  • Big handful grated mozzarella
  • Fresh Coriander
  • Juice of ½ Lime
  • ¼ tsp Paprika & Cayenne Pepper
  • 2 Corn Tortilla Wraps

CHOP your tomatoes & coriander finely

COMBINE & MIX all ingredients, but only half your mozzarella and not your wraps


SPREAD your mixture over one tortilla and top with the rest of the mozza and the other wrap

PAN fry both sides till cheese is melted



BOOM! Really just a simple case of mix and dish! No longer does it have the distinct taste of fish but has taken on exotic Mexican notes, that over flow with flavour, zest and spice! Cruchy tortillas and a delectable centre really can’t be beaten!
