Vietnamese Noodle Soup- Pho
There is something seriously refreshing about noodle soup, sitting in the garden bowl and chopsticks at hand, tucking in and just enjoying life in the sun!
It’s not often I go full on with Asian food making the more “soup” style foods knowing in the past for them to take a long time to make BUT I’ve shortcut this and made it easy! One pot, 20mins, many meals, epicness achieved!

INGREDIENTS
Ingredients Broth
- 3 Cups beef stock
- 3 Cup water
- 1 onion halved
- 1 -2 inch ginger halved
- 1 Cinnamon stick
- 5 Star anise pods (usually just one star)
- 2-3tbsp fish sauce
Ingredients filling;
- Sirloin steak
- Spring onion
- Rice noodles
- Jalapenos
- Coriander

HEAT a saucepan
SEAR the steak 2-3mins each side, take out and plate
POP in halved onion and ginger for couple mins
ADD stock, water, cinnamon stick and star anise leave to simmer 15mins
ADD fish sauce simmer another 5 mins

COOK rice noodles as per instructions on packet
SLICE thinly your sirloin steak

CHOP spring onion, coriander and jalapenos
DRAIN noodles and bowl up

POUR soup over (take out onion, spices and ginger before serving)
ADD chopped spring onion, coriander, jalapenos and steak
DONE
BOOOOOOOOM! Your kitchen will smell like a food market in South East Asia! Ahhhh BLISS, chilling out, relaxing and maxing, eating some bowl of Vietnamese cool!
