Cycling Rice Cake
Simple and easy rice cakes to make ot have on rides or runs to keep yourself fuelled from a whole food source or if you just want some solids.
Super easy to eat - high in carbs - lowish in fat and definitely low in fibre and high glyceminc index make it an ideal option to have while exercising to provide fast digesting and releasing energy.

INGREDIENTS (for two people)
Rice
- 500g Short grained rice
- 1Ltr water
- 200g creamed coconut
- 25g sugar
- 3g salt
Sweet
- 200g Chia
- 150g chopped dried apricots
- Cinnamon (optional)
Savoury
- 4Tbsp Mirin
- 3Tbsp Soy sauce
- 15g Nori seaweed
- pink peppercorns (optional)
ADD all rice ingredients in a rice cooker
SET to cook
ADD cooked rice mixture to bowl
ADD your chose set of ingredients SWEET or SAVOURY
MIX till evenly spread
ADD to a baking tray or big plastic seable bag
LEAVE overnight or at least 4 hours to set
CUT into your desired amount of pieces we recommend 20
DONE
