Gluten Free Mince Pies

With it being Christmas time there is a whole load more other treats hitting the shops with you being tempted round every corner!! Sadness swells up inside you as you think how much you would love to eat and try some mince pies but the thought of how many calories in each makes you feel like you gain weight even at the sight of them!

*SWOOSH* And so enters the new amazing gluten free and lower calorie option! And like the morning after a long storm the sun rises, happiness swelling deep within you knowing now you too can indulge in the epic taste of Christmas without worrying as much!

INGREDIENTS

For pastry:

115g Rice Flour or Gluten Free flour
70g Yogurt or soya yogurt for to make it vegan
1.5 tbsp truvia (or any sweetener you like)
Pinch salt
1/4 tsp xantham gum
40g melted butter or coconut oil
1/2 tsp nutmeg & cinnamon

For filling:

I used a pre made organic mincemeat 100g ( mine was vegan though check the label to be sure)

For Topping – use either more pastry or my sugar free marzipan

60g Almonds
35g “Truvia”
1 Egg white

SET your oven to 190C

SIFT flour and all powders in to a big bowl

ADD yogurt and combine till it forms bread like crumbs

STIR in the melted coconut oil to form a big dough

WRAP in clingfilm and leave 10-15mins

ROLL it out with a rolling pin

CUT your pie shapes and place in muffin tray.

FILL with filling

SLAM them in the oven for 15mins

If you want a pastry top follow the next steps and put the top on before cooking

For sugar free marzipan BOSH all ingredients in a blender

BLEND

ROLL out and cut into shape

PLACE on top

GRILL 4-5mins

DONE

BOOM!!! Epic tasting and quick, cut into slices and serve with gooey melted cheese or tuppaware up and take to work to make you the envy of all your colleagues!
