Lime & Coconut Cheesecake
Cheesecake is definitely one of those foods that you just thing *DAMN If I eat this I’m gonna get OBESE!” HA! It also tends to be just made from dairy and animal products which are fine... but not if you are intolerant to lactose or are vegetarian!
SO! I thought we need to change this and make something absolutely AWESOME that even normal cheesecake fiends will love, and since the sun is shining I was just itching to have something zesty and fruity.
BOOM! *the Saloon doors fling open in waltzes.... Lime & Coconut Cheesecake* Screams fill the room as if it were a class of school girls but actually it’s just a bunch of fully grown bearded men as they know just how TASTY this villain is!
Anyway let’s get makin’ & bakin!
(Measurements may change slightly depending on your tin)
- 60g ground Oats
- 20g Desiccated coconut
- 40g Coconut oil – melted
- 3 Avocados
- Juice & zest of 1 ½ Limes
- 80g Coconut oil – melted
- Stevia or MyProtein Flav drops (I used a little of both and used apple flavour drops)
*NOTE* if you don’t like stevia or sweeteners use honey probably around 80g
BAKE oats for 10mins at 160c just to go golden
COMBINE oats with rest of base ingredients and press into tin base leave to cool
BLEND all filling ingredients together till smooth, creamy and fluffy
TASTE test….. YUM if not add more stevia/honey if you think you need it.
*OPTIONAL* Chocolate swirl – melt chocolate and pour slowly to form a nice swirl
BANG it in the fridge to set
EASY as that! No real baking needed, no worry of under cooking or over cooking your cheesecake just awesome goodness that makes you feel so naughty even though it’s just full of omega-3’s and MCT (Medium-Chain Triglycerides), vitamins and minerals it’s undoubtly the best cheesecake out there for you!
Plus it just tastes amazing, sweet, creamy and with the perfect amount of zest, that makes you just go “OOOOOOOO” and eat some more!
