"Munchkin Pumpkin" - Spiced Apple & Currant stuffed Pumpkin

CORRRRR!!! We be Munchin some Pumpkin tonight!!! An awesome Halloween special come straight from the Primal Kichen your way!! Now whatever you're doing this spooky holiday I completely and utterly recommend feeding your friends, family and anyone you wish to love you again, this recipe is EPIC!!

That quote tickles me a bit, but what I think is important to realise sometimes is that people associate tasty food with "unhealthy" food, which is completlely untrue. Take this recipe for example only good natural ingredients, no added sugar, hardly any fat (not that fat is bad just high in calories) and taste ultimately awesome!! Whatever your goal is just eat wholely nutritious and epic food!

You would be suprised but pumpkin and apple together are like long lost cousins or even brothers, their flavours blending beautifully together you would think they should be one and the same!!

So let's get makin' & bakin' already!!

INGREDIENTS FOR 2 PUMPKINS

  • Minature pumpkin
  • Half tin of “Libby’s” Pumpkin Puree (Waitrose, Sainsburys, Tesco)
  • 1 apple
  • Toffee flav drops from MyProtein
  • 1/2 tsp Cinnamon
  • 30-40g of currants
  • 1.5 tsps of butter

SET the oven to 180C fan assisted

CUT open the top of your pumpkins and empty the contents, save the seeds for this reason
BAKE the pumpkins with the tops on for 20 – 25mins

PEEL and dice your apple

STEW the apple pieces and currants in a pan with some water for about 10-15mins or until soft

MIX stewed apple and current mixture with pumpkin puree, butter, cinnamon and toffee flav drops (enough to make sweet or to your liking)

PING take your pumpkins out

FILL pumpkins with mixture

POP back in the oven and cook for another 15mins or until center is nice and warm/hot

HAHA! Oh god this is were you should probably taste it yourself rather than allowing a family member to, and turning back 2 mins later to find 1 of your 2 pumpkins completely devoured! These are gorgeous little, self contained desserts! Perfect to serve up on a nice plate or if you want it to look rustic a wooden serving mat/board, pop those little tops off and just smell the sweet, fresh and fruity aromas rising from the centre!

Dig in your spoon and scoop out some of the side of the pumpkin with the mixture and just taste HEAVEN! The unflavoured pumpking adding texture and real depth to the dish which is topped with the smooth, velvet texture of the filling that is delicately sweet and so creamy!

This is honestly the best dessert you could be dishing out this halloween or festive season!
