Rosemary Scallops with Creamed Carrots
CORRRRR!! Yes!! With the brand new and fresh season of scallops here I’m going to be doing too many posts on them! These little morsels are just electrifyingly tasty!! So quick and so easy with you being able to make them within 10mins and are just perfect for a starter or add with some steamed asparagus and have yourself a gorgeous main course!!
Currently in season means they’re tasting their best right now and will be highest in nutrients and should be cheaper! They have two types of meat in one shell: the adductor muscle called “scallop”, which is white and meaty, and the roe, called “coral” this is usually a reddy, orange or white colour.
Scallops are rich in tryptophan, an amino acid that the body converts to serotonin. Serotonin is a brain neurotransmitter that’s important for sleep; and eating foods like scallops in the evening could make it easier to doze off. Add some carbohydrates with your scallops if you want to fall asleep faster since carbohydrates help trytophan reach the brain where it can make you sleepy.
They’re also an excellent source of B12 – vitamin that’s critical for healthy nerve function. B12 deficiency can lead to serious neurological problems and Alzheimer-like symptoms which can be permanent if not treated. B12 is only found in animal products, so scallops are a good source for non-red meat eaters

INGREDIENTS
- Scallops
- 2 Carrots
- 50g creme fraiche or your choice of cream/yoghurt
- Rosemary
- Salt & Pepper

GORGEOUS!!! Crispy on the outside from a good searing and with a soft, delicate inner that’s so good it makes you just want to hug yourself!! The taste is so good you may walk in your kitchen and find you mother as taken the joyous task of eating them all for you too! HA!

Get PRIMAL, Be Happy!
BOIL your Carrots till soft
BLEND with creme fraiche, salt, pepper and tiny bit of rosemary then set to one side
HEAT some oil in a frying pan till real hot, add chopped rosemary to help release flavour
SEASON your scallops generoulsy with salt & pepper
BOSH them in the hot oil and fry for 1-2mins one side or till crispy turn 1min the other side
DONE serve on top a bed of creamed carrot
