Thai Chicken Skewers & Peanut Sauce
Corrr just the title makes drool a meal worthy of crossing Middle Earth for!
High in protein low in carbs and fat depends on how crazy you go with your sauce! Don't get intimidated by the list this recipe goes quicker than you think and the batch cooking potential is SKY HIGH!

INGREDIENTS
Ingredients Thai Skewer;
- 2 Chicken breasts
- 3 tbsp Soy sauce
- Zest of 1 lime
- Juice of half a lime
- 2 garlic cloves
- 1/4 tsp ground ginger
- large pinch salt
- 2 tbsp Toasted sesame seed oil (but any oil would suffice)
- 1.5 tsp thai curry powder or paste
Ingredients for peanut sauce;
- 1/2 cup coconut milk
- 1 tbsp peanut butter
- 1 tsp thai curry powder or paste

CHOP chicken breast into chunks
MIX rest of ingredients into a bowl and mix
MARINADE chicken in the bowl and leave 4 hours or over night


GRILL 4-5mins a side
BOSH all peanut sauce ingredients in a pan
HEAT on a medium heat till warm and mixed through


SERVE hot skewers with side dip of warm sauce
BOOM!!!
