Weetabix Banana Pancakes
I woke up one morning in the mood for pancakes, but with very limited ingredients. I was in dire need of a trip to the supermarket! Using all my brain power and recipe making prowess I came up with this concoction that I now use on a regular basis!


INGREDIENTS
- 2 Weetabix biscuits
- 2 eggs
- ½ cup 0% Greek yoghurt
- 1 ripe banana
- 20g raisins
- ½ tsp vanilla extract
THE METHOD
CRUSH the Weetabix biscuits into a mixing bowl
WHISK the eggs until fluffy
BLEND all of the ingredients except the raisins into a batter
ADD raisins to the batter
HEAT a non-stick pan on low heat
COOK each pancake individually by adding some butter or oil to the pan and frying either side for a couple of minutes until turning a little brown and crispy. Use a ¼ cup measuring cup to make even sized pancakes. Tip, these should not be made to thick so as to prevent them falling apart!
DONE enjoy your pancakes with your favourite fruits with honey, jam, or maple syrup…with your macros in mind of course!
